Naturally

I have to say – though it was cloudy most of today, the weather still held out and it was beautiful.

It made me really excited to a. clean my windows after a winter’s worth of grossness had built up on them and b. take photos using natural lighting – instead of my flash!! I only have a point and shoot, but it really does make all the difference in the world!

I was up decently early, but not super early. My original post from this morning was from about 9:30 and I hadn’t even been up for an hour before that. I think my body was craving sleep.

I started off the morning with coffee…it’s days like today when coffee isn’t so much for the boost but just a treat. It’s nice to be able to sit back and savor a hot drink instead of having to gulp it down while multitasking, right? haha

I munched throughout the morning and afternoon. Pretty typical eats for my “day off.” I had a big ole bowl of Trader Joe’s Frosted Maple and Brown Sugar Shredded Wheat (obsessed), some TJ’s dried apricots and some TJ’s Thai Lime and Chili cashews and some applesauce. (Can you tell where I’ve been shopping? haha).

I spent most of the afternoon on school work – joy. Only a few more weeks left…unbelievable…but at the same time so jam packed – it’s ridiculous. I took a break to check my mail and found a lovely, bright envelope waiting for me from Emergen-C! Yayyy free samples!! I have yet to try any of these flavors (even the orange) but I’m especially excited to try the Pink Lemonade – yumm – a good cause and summery! I’ll save them for a day when I really need the boost!

Dinner was early – why? Oh, just obsessing over pizza…again. I have a problem. haha BBQ tortilla pizza, again. It’s addictive…obviously.Pizza rehab with Dr. Drew…here I come.

I still have lots of work to get done, and not enough time in the day! haha :) I may start posting two times a day again…like I did at the beginning of last semester. Hmm, we’ll see. haha

I hope you are all doing well!! Love.Love.Love!

Study, study, study

Hello, hello. Hope everyone’s Monday went well!!

It’s crunch time for me. Papers, midterms and work galore – Oh my… but first…the food! haha

This afternoon, I munched on some grapes for a snack. I always forget how much I love grapes. I never really think to buy them.

For dinner, I made brown rice with soy sauce, red chili paste and a little sesame oil.

IMG_2748
I was really hungry…can you tell??? haha

IMG_2750

It was spicy and totally hit the spot. :)

I’m also having a little bit of applesauce — a little sweet and spicy dinner goin’ on.

We’ll see how the rest of the evening goes…in terms of food, I have a feeling it’s going to be a late one!! Perhaps some cocoa dusted popcorn is in my future. Ahh. I need a vacation already. haha Anyone else??? :)

RRRoastin'

Today was a pretty good day overall. I’m happy that it’s over though. I don’t have have my normal class tomorrow sooo it’s officially the weekend for me! Woo! Unfortunately, that means I have about 1,001 things to do …cuz you know, professors are so good at spacing out all of the stuff you have due.

Today I watched the movie “Un Secret” for my French class…boy, was it..well, not depressing…but thought provoking. I kind of wish I owned it so that I could watch it again. There’s something odd about sitting in a computer lab, with headphones on, surrounded by strangers and watching a movie. haha

Anyway, onto the food! That’s the important part, right? haha Well, I went to Whole Foods around noon to find myself a bite to eat. NEVER again will I go to this particular store at noon. It’s was ridiiiculously busy (its location makes it an easy lunch spot).  It was like people had never seen food before. Plus, buffet etiquette was lacking so I passed on the whole “food bar” aspect.

I ended up getting a small portion of a run of the mill avocado roll. It was yummy. Nothing too exciting. It was just enough food though, and satisfied my hunger. I got a Green Machine from our little “lounge café” on campus – I had most of it but unfortunately forgot it in my last class…boo.

*Note: I did not take these beautiful sushi photos — but they look like my lunch today — substituting the white sushi rice, for brown rice.

Oh, while I’m thinking of it…I tried  Trader Joe’s version of the Green Machine (“Trader Joe’s Very Green Juice Blend), and it was verrrrry close in taste. More than taste, it was just a touch more acidic than the Naked Juice version, but still very, very good.

Back on track now, I came home and immediate turned on the oven. Got out a zucchini, some cabbage, some olive oil, onion powder, salt, pepper, and red pepper flake and roasted the veggies. YUM!

I also broke out my trusty rice maker and made a tonnn of brown rice (6 cups cooked). I season it with some Mrs. Dash Seasoning – Southwest Chipotle. I love this thing. Best appliance I have in my apartment – fo sho.

I’ll probably have a little rice, later, when it’s done. For now, veggies and maybe some applesauce later. haha Oooh the possibilities!

Hope everyone has a wonderful Thursday!

Lady Luck

Ahh, today, luck is on my side. Why you ask?

Well, last night — I made sure to set my alarm, as I always do. For Tuesdays/Thursdays I am lucky enough to get to set it for 6:45am in order to be out the door by 7:30am (all other mornings it’s 6:15…bleh).  Anyway, so yes, I try to get out the door on Tuesdays and Thursday by 7:30 — 7:40 at the latest so that I can make it to Starbucks and then make it to class with plenty of time time spare (class is at 8:30am).

So this morning, I wake up…look at the clock and it’s 7:35!!! I immediately go into panic mode…cuz well, I know I can get up and out the door in 10 minutes, I just have to hustle!! As I panic, I grab my phone to see what I did wrong in setting my alarm….

…. and there is an e-mail from my 8:30am professor stating that class for today would be CANCELLED!!! How lucky am I?!? Needless to say I crawled back into my bed for a couple more hours of shut-eye. (Oh, and I set my alarm for PM instead of AM…rookie mistake, rookie mistake. haha)

This morning I’ve fueled up with some unsweetened applesauce, some tea, and right now non-fat pomegranate Greek yogurt from Trader Joe’s (with added roasted/unsalted sunflower seeds [also from TJ's]). Yum, yum, yum. I might stop for a coffee later on, we’ll see.

I’m getting all fueled up and then I have lots to do for the remainder of my day. :) Hope everyone has a good one.

Green Machine Goodness

Ahh, I have to say, I am glad today is over. It is only Tuesday, but the week seems like it should be over already. Anyone else feel the same way? Not a good sign of things to come. haha I’ve just been really tired, and I’m honestly looking forward to a weekend of doing nothing – well, except working… BUT it’s a long weekend, and that’s always a plus!! Gosh, here I am blabbering on about the weekend and it’s not even Wednesday yet. haha

Anyway, so it was an early one…well, technically every day is an early one. I was up, out the door, coffee in hand, and in class for 8:30am. I managed to snap this pic of my coffee in the elevator – so incognito of me!

IMG_2204

Class went well, got out early…which gave me the opportunity to get home and  EAT. I munched on a portion of a banana – some of it was just too bruised. I threw that part in the freezer though for some future banana bread-making endeavors!! Frugal, frugal, frugal! I also had a Trader Joe’s Fat Free Greek Yogurt – Honey flavored. I add sunflower seeds for some added crunch!! (Pre-shelled, of course).

I had a meeting at 1, so I had some downtime; which…I was a blob. I’ll admit it; I did nothing. However, I made it to my meeting, and then I got some “sushi” and a tea from Whole Foods. (Not pictured, unfortunately). The “sushi” was yummy a.k.a. a veggie roll made of brown rice, sesame seeds, cucumber, avocado and nori. The tea was – mehh. – I forget which brand it was, but I think it was more the fact that it was iced tea, that got somewhat warm before I could drink any, that was the problem.

I also grabbed a Naked Juice – Green Machine. So delicious.  It has a good chunk of sugar (from the fruit, no added sugars!!), especially since I drink the whole thing, which equates to two servings, but it’s just what my body needs to power through my last class of the day and hold me over until dinner.

Now, I have a ton to do tonight – so a good meal is necessary. I’m having brown rice with Trader Joe’s Autentica Salsa and a wedge of Laughing Cow Light, some unsweetened applesauce and some of Trader Joe’s Blueberry and Pomegranate Green Tea, again. I think I’ll probably also make some roasted corn later on.

On another note…they’re still filming for the Kevin James movie, “Zookeeper” around here. The filming signs are ever-present!

Hope everyone had a great day!!!!
