EZ Bake Oven

Omgosh — HELLO! haha Hi! I’ve missed you guys!!

Yes, I’m still alive — I took an impromptu … “break” from the blog this weekend. It wasn’t planned, but it ended up being a good thing. I went home to spend some time with mi madre…it was odd being home, and my dog not being there wriggling all over the place like she never thought you’d ever come home. I cannot imagine how truly lonely my mom is now that Haley is gone — and I know another pup is necessary — not only to love, but to stay with my mom, allow her to feel safe and to make things less lonely.

I brought my mom home some flowers. And they just so happened to be yellow. My mom immediately called them “Bit-O-Honey” and it was just too cute. For explanation, my dogs middle name was “Bit-O-Honey” because her parents both had candy as their middle names, and it was so fitting. She really was a little ray of sunshine.

So I spent the weekend chillin’ with my momma, and I went out and caught up with a former co-worker on Saturday night over margaritas. It was a lovely weekend…and I so did not want to return to the grind today. haha

I did though…this morning was a toughie, in terms of waking up. Oy! But I did it. I had watched the Super Bowl (YAY SAINTS!) and just couldn’t fall asleep for the life of me.

I grabbed a coffee in the cafe on the way to my 1st class. Which…was locked. So I waited…and waited…and waited. Yeh, nobody from my class showed up until the last minute – including my professor. It was just one of those Mondays, I guess. haha

I had a French quiz — I dunno how that one went…oh well, if it went badly there’s the rest of the semester to make up for it! The perfectionist in me is really nervous though, and just wants to know my grade so I can get it over with.

I broke for lunch in between French and Journalism and got a glorrrrious salad from the salad bar in the cafe. I’ve found that…contrary to any other college I’ve stepped foot on…the cafe is actually pretty cheap (well, for the stuff I want to eat). So I had a salad with spinach, edamame, feta, tomatoes, arugula and spicy peppers…topped it off with some balsamic and oil.

Got home, and did a little grocery shoppin’. Just a few things, and totally NOT the essentials. haha I was hankerin’ for some chocolate so I made myself a little microwave mint brownie. Oh yes — it’s like the EZ Bake Oven…for adults. haha :)

4 Tablespoons of brownie mix, 2 Tablespoons of non-fat Chobani…50 seconds in the microwave. *cue angelic choir* Now, it’s anything but pretty, but it is so, so good!! :)

Dinner was leftover soup again…nom.nom.nom. It keeps gettin’ a little spicier as it sits. I’m not complaining….I love me some heat.

Doctorin' it up

Hello, hello lovelies! How was your Monday?? Hope you survived, and it wasn’t too awful. :)

Today …it was REALLY hard for me to get out of bed. I so just wanted to say “screwww it” and roll over under the covers and forget about class — alas the good student in me got me up and dressed and out the door on time…but I did stay in bed longer than usual (what a rebel).

In my putting off of actually having to get out of bed, I eliminated my window of opportunity for making myself coffee…so I stopped at the ‘bucks on my way to school and got a Venti ’cause I freaking NEEDED it this morning. I trudged my way up the hill, and went to my locker (I feel so …dumb…saying that haha) — where I snapped a shot of my latte and loaded up on my million pounds (okay, today it was 20) of books.

When lunch time rolled around (and I actually had a break), I made a run for Whole Foods where I made myself an ecclectic salad consisting of spinach, BBQ tempeh, beet salad, some form of spicy bean and tabouli. Oh and I doused with a little red wine vinegar and oil. Overall, enjoyable. I liked the tempeh the best…I hadn’t really had beets before — and I was surprised that…they didn’t really taste like much. Very earthy. Though they weren’t my fave I gobbled up the whole thing.

When I got home — I was exhausted. I chomped on a couple of cheese sticks and took a nap for about an hour. I woke up to my phone ringing – seriously, my phone won’t ring for an entire day, but the moment I settle into take a nap — suddenly the world needs to get in touch with me. haha

Dinner…I went with my usual brown rice “medley” of sorts. Rice, peppers (sweet and spicy), edamame mix, soy sauce, hoisin and sriracha…oh and a few sunflower seeds. This was alright — not my fave concoction though.

I felt inspired to pull out the good ole pudding mix tonight. I haven’t used this stuff in a while! I go on food kicks…and I think I just eat something so much that I get tired of it… Needless to say, I was inspired tonight and decided to doctor up the normal mix.

Meet: Cinnamon-Vanilla Puddin’! It’s seriously so good — I just made my normal instant pudding mix, added a little extra vanilla extract and some cinnamon. BOMBBB. I’m currently wolfing it down. :)

I should probably hit the books soon…get some stuff done so I’m not stressed tomorrow.

Fail Whale

Evening everyone! I hope everyone had a great humpday. Mine was long…but it was good. It’ll be interesting to see how this semester goes. :)

First order of business…I want to let all of you guys know about the awesome Dentyne gum giveaway that Jenny @ Peanut Butter & Jenny is doing. SIXTY awesome pieces! You know you wannnaaaa! :)

Now, onto my eats.

I was up bright and early — due to my oh so lovely classes. So early that there wasn’t really natural light to take pictures with…oh well…I sipped on a “leftover latte” (just thought of that and I think I like it) of leftover espresso and milk & whatnot. As I sipped..I tried to get on Twitter…but nope … FAIL WHALE. Really?? That early?? I hoped that it wasn’t an omen for my day to come. haha

Other than an *almost* slip on the way to school — my cat-like reflexes came into play there and saved me…I had a dirty, black paint-chip colored hand from grabbing onto the fence next to me…but other than that I came away unscathed! — my day was anything BUT a fail whale. I’m excited about my new classes (well, the ones I had)…and they should be really interesting. Though my schedule is super hectic…and my bag weighed 19.2lbs today, and that was minus 4 books that I need…(oy, and yes, I weighed it)…I hope this’ll be a good semester.

In between a couple of classes, I hung out at the library with another cup of coffee — wasn’t really hungry — so liquid calories it was!

Once I got home, I whipped up some lunch for myself. I wanted something cold — so I decided to try cold brown rice, parsley, chopped spicy peppers, and some cranberry balsamic dressing. It was pretty good — I’d have it again, except I think I would warm up the rice just a little plump it up…but not get it really hot. The peppers were my fave part.

I lounged for a little (exhausted from lugging 20lbs 4 miles), and was hungry again…so I popped some popcorn.

Crunch.Crunch.Crunch. More lounging ensued as did shoveling a couple of unpictured cheese sticks, and a couple of spoonfuls of Cinnamon Raisin Swirl into my mouth.

For dinner, I warmed up a bowl of split pea soup — with my usual parsley garnish — and I added some red pepper flakes.

I also had a repeat of last night’s spicy sweet potato fries. They look a little crispier on the outside, but they were still nice and sweet on the inside. Nom.

I’m gonna spend the evening relaxing, doing some reading for class and thinking about a logo that I need to create for design… oy.

Pepper Perfection

Ohhh my, I’m so glad I made that midday post yesterday considering I didn’t get back to my apartment until 10:30pm! Needless to say, I literally collapsed when I walked in the door. I managed to heat up my usual brown rice concoction, and polish off a jar of peanut butter before crawling into bed and CRASHING. Can I just say that I strongly dislike group projects? gahh. Especially group projects that require presentation…blah.

Anyway, today has been much nicer. It was a pretty nice day out there! Even at 7am, it wasn’t ridiculously cold, and it got up to around 60 today. I got a coffee this morning (I still need to replace the rubber part in my espresso machine). It definitely powered me through class — seeings as the classroom was super warm, and I probably would have fallen asleep if it hadn’t been for the coffee. haha

I got home and made myself a bowl of yogurt mess. Yummmm.

When I was almost done my breakfast, I suddenly realized that I needed to grab something from campus to do a homework assignment that I had totally forgotten about. Uhh PANIC. haha I shoveled the rest of my breakfast into my mouth, and booked it to the neared T because I wasn’t taking the chance of the lab being closed if I took the time to walk. haha It worked out though…..yay! haha

I ended up going to Shaw’s on my way home. I’ve wanted to pick up peppers ever since seeing Ashley’s post about stuffed peppers. YUMMMM. I also picked up some cheese sticks, some popcorn and some seltzer water.

Unintentionally, I bought cheese sticks with Spongebob Squarepants characters and trivia on them. haha A surprise, but it’s cute.

I got home and popped myself some popcorn, on the stove, for lunch. A LOT of popcorn. haha

So for dinner tonight — I obviously stole from Ashley and made myself a pepper stuffed with rice, frozen veggies, soy sauce, chili sauce and sesame oil. I snacked on the top of it while it baked.

Alright so I’m relaxing for a very short amount of time and then I had to tackle some French homework AND study for a quiz in the AM. Eeeps. I think school is trying to kill me. haha

What a Finale

Hey ladies (and gents?)! Sorry about the lack of posting yesterday. I had every intention of updating, and then life got a little overwhelming around dinner time, and most of the evening was spent in conversation (some of it teary) with my mother about life, decisions and where everything is going.

Uncertainty is overwhelming, no? And I definitely feel that at this point in my life. Maybe at another point I’ll elaborate on that, but for the sake of keeping this a “non-debbie-downer” post…I will refrain! haha :)

Yesterday, even with those conversations, was an amazing day. I got up went to class and came home (you know: the usual)…and for breakfast, I had a BIG glass of Green Goodness and some cheese sticks. hahaha What a combo.

I decided to try a new and exciting angle of my juice. hahaha :-P

I ended up falling asleep for a couple of hours, but they weren’t very restful…I kept waking up and thinking that I was late for something? I wasn’t. haha It literally kept happening again and again, til it got to the point where I was just like, “Screw it, I guess I’m not supposed to nap.” haha

I got up, cleaned a little and went out to lunch with my brother. We went to this place called Finale (the one behind the Four Seasons and next to the Park Plaza Hotel). I had seen it before, and honestly, it looks a little bit intimidating from the outside. Plus, it is widely known for its pastries, but they have a great lunch selection, too. Simple, but I think that’s what makes it good!

From the outside, it looks chic and fancy — perfect for its location, sandwiched between two pretty swanky hotels. However, once inside, you realize it’s an “order for yourself, take a number to the table of your choice and they bring you your food” type of place. Refreshing, actually. My brother and I both got the Mix and Match — a cup of soup and a 1/2 sandwich.

I got half of their “California Turkey” sandwich – smoked turkey, avocado and sprouts with chipotle mayo on focaccia. They had three choices of soup for the day - clam chowder, chicken noodle and the beef chili. I got the beef chili - it seemed like the best accompaniment to my sandwich. :)   I also got a Cafe au Lait.

I loved everything I had. It just hit the spot. The sandwich was great — albeit a bit slippery, but they did mash up the avocado so that it was easier to eat. The beef chili was perfect. It wasn’t too thick or too thin. It totally hit the spot on a cold, wiiiiiiindy day in Boston. My Cafe au Lait was so good, too. Seriously, one of the best cups of coffee I’ve had in a while. Plus, I just love cute cups. haha

Great lunch. Great lunch. I would go again in a heartbeat, and boy, I wanted to try their pastries so badly! They looked amazing!!

Anyway, last night I went out to dinner with my mom. (Sorry no pictures…I suck). I got butternut squash cannelloni with cranberry-teryaki chicken. I also had a couple of cocktails – a pomegranate martini and a pink lemonade cocktail. Dinner was delicious, and I had a great time with my mom — but conversation got pretty deep and it did lead to a — not unpleasant evening, but an emotional one, I guess.

Although, I did talk to her about going to the FitBloggin Conference in Baltimore, and she was totally for it. She basically told me I had to go, haha. As she said, about money, “You can’t take it with ya!” So true, so true. So I’m about 95% sure about FitBloggin. I think I would have soo much fun! Plus, after seeing so many pictures of FoodBuzz (like on Ashley, Jenna and Maggie‘s blogs!), I wanna go to a conference!!! haha

Anyway, today is a rainy day and perfect for getting work done — which is hopefully what I’m doing. :) So far, I’ve just been really good at procrastinating. hahaI’m munching on some Kashi Go Lean Crunch – Honey Almond Flax and “watching” television while I blog away.
