Roastin’

The other day, Jenna did a post on her honey barbecue chicken.

That was it. I was hooked. I had to make a roasted chicken.

I ran to the basement…yesss, a bird was just waiting to be massaged with spice rub goodness.

My spice rub of choice?

Dinosaur’s Cajun Foreplay.

My entire family is obsessed.We had Dinosaur Bar-B-Que years ago when my cousin got married at Colgate University and they catered the rehearsal dinner. The barbecue salmon was out of this worrrrrrrrld….

Back to the bird.

So – I didn’t have honey (used it all…here), but that’s okay.

I stuffed the cavity with an entire lemon (halved) and 3 cloves of garlic. Seasoned the thing with salt, pepper…smothered it in about a tablespoon of olive oil and then liberally rubbed the Cajun Foreplay allll ovahh.

375 and about 1.5 hours later….a crispy, spicy, smokey, & sweet bird emerged.

Wicked juicy. :)

Craving. Complete.

 

Memorial Day Weekend

Hello, hello. I hope everyone had a wonderful (and remembrance-filled) Memorial Day weekend.

I was lucky enough to get together with a few of my family members at our beach house; we enjoyed the sun (it was hotttt), the company and had some fantastic meals filled with amazing conversation.

Saturday night – we had this amazing lobster and shells salad that my aunt and uncle made. An Ina recipe, it did not dissapoint!!

The salad, piled on top of a bed of greens, made for the perfect, light end to the day. I went back for seconds…and maybe a tiny helping of thirds. So. good.

For dessert there was pie, a few cookies (Tates – which are so thin and delicious), and vanilla ice cream. We had blueberry and blueberry/apple crumb pie. They were both so good – but my fave was the apple and blueberry combo.

Pie makes everything better :)

On Sunday, we had a wonderful meal of grilled chicken, salad and rice pilaf. An amazing meal outdoors, next to the Atlantic – doesn’t get much better.

Pretty patriotic. haha

A Lil’ Naughty, A Lot Nice – Part 1

This holiday season has been an absolutely fantastic one. As I sit here, snowed in – all I can truly think about is how thankful I am for those around me. I am so lucky to have such great people in my life (including all of you, bloggies!). The thing I love most about the holidays is just the love and happiness. Period. “Tis the season to be jolly,” eh?

From cookbooks to socks, my friends and family were more than generous with me this Christmas – but listing exactly what I received isn’t on my to-do list. Though – I’m sure you will be seeing them on the blog at some time or another!

I’ve been able to spend some glorious time with my best:

Plus, we spent the day laughing until our sides hurt. …a little Christmas Vacation helped that. You’ve got to love the Griswolds.

We indulged in (less-than-traditional) fantastic food – including Gruyere chicken, creamed onions, veggie casserole, pepperoni squares, pasta, cookies, lemon meringue pie, and the most amazing Oreo cookie truffles…-  and just relished in the comfort of being around the ones we love (though, my cat was less than pleased with the noise and company and freaked out halfway through the evening…she has since calmed down with the help of her annual catnip bender).

The appetite is back…

Hola lovelies!

This morning I was up bright and early for a doctor’s appointment – where he just basically told me what I already knew…I had/have the lovely stomach bug that’s going around. Joy. He asked if I wanted anything prescribed for nausea…and honestly, I can deal with nausea so I nixed adding those meds…however, I did take him up on his other prescription:

My heart rate was high because I was dehydrated so he told me to stock up on Gatorade (G2 specifically, since it has less sugar) and rest up.

I feel muuuch better, and I’ve actually had an appetite today which included lots of beer bread (carbs can cure anything haha), saltines, gingerale, homemade soup, chicken balls… and even a Circle K coffee…yum. Fats and carbs were what my bod wanted – and it got what it wanted. :)

I hope you all are happy and healthy!! I’m pretty much on the other (better) side of being sick now, I think….aaaaaand tomorrow is Friday – yipee!!

Spoiled Rotten

Today was quiiiite the day for me! Well, in terms of food…lots of amazing experiences. Let me just preface this post by saying that my usual healthy eats have been…shall we say…thrown out the window in these last few days that I have at home.

Basically, I’m spoiling myself before getting back into the grind. hahaha :)

Today started off innocently enough — coffee and some Multi-Grain Cheerios.

However…lunch was out of this world. My bro has talked about this barbecue place up in Brentwood, NH that does legit, smokehouse Texas BBQ. YES. In New Hampshire. hahaha Anyway, he’s been a few times, and I decided it was high time that I checked it out.

Goody Cole’s Smokehouse in Brentwood, NH is awesome. It’s such a great little place, and you just smell the smoke in the air the moment you walk inside. Plus, we pulled into the parking lot and there was a police cruiser there..no, not to bust anybody…but to eat…and seriously, if the cops eat there, you know it’s gotta be good!

…and was it everrrr! I don’t think I’ve ever had REAL smokehouse BBQ before, and I can’t believe I waited so long. haha I got the pulled pork plate with mac and cheese and their cucumber salad – oh and cornbread…cannot forget the cornbread. My bro got the brisket. They serve it to you sans sauce and you pick what you want….I topped mine with a mixture of medium and hot. This was awesome. Moist, smokey, crispy pieces and it was just awesome. I ate every last bit of meat on my plate and all of the cornbread and left most of the mac and cheese (even though it was good) and some of the cucumber salad (equally as good) — my priority was the ‘cue though. haha

VERY FULL. haha I literally napped ALL afternoon — I think it was a combination of the fact that I didn’t sleep very well last night, and since I don’t eat meat all that often…THAT much meat at once took a lot of effort to digest…hence…sleeeeepy time.

Oh — and the spoiling didn’t end there.

As I mentioned last post, my brother cooked dinner for my dad and his wife as a Christmas present for them. Tonight was the night for the meal. And ohhh my God. My brother’s skills in the kitchen never cease to amaze me. He’d be all modest and say “Oh, I just followed a recipe” — no, no…not everyone can follow a recipe and have it turn out like a freaking restaurant meal. Delicious.

Here’s my bro, choppin’ away at garlic for the broccoli rabe (raab? sp?). Fists of fury! Look at those knife skills.

The soup you saw the beginnings of last night…simmered away on the stove with the addition of some cilantro.

The complete finished meal: Carrot & ginger soup and hoisin chicken, with a maple, miso, and wine sauce – on top of a savory pancake that was laced with mint, sage and parsley, and garlic broccoli rabe (raab?). Oh…and a little red wine as well. :)

HOW amazing is he, right? It looks like a meal you’d get in a great restaurant.

I am now going to spend the night reading and watching tv — reflecting on how amazing (and amazingly different) my meals were today…and SLEEP. haha :)
