Outside the Box

Hello, hello my loves!

Today, I woke up craving eggs – and by today…I mean that I’ve been craving a specific egg dish for a while now, and I finally got around to purchasing the ingredients to prepare it! …so less than spontaneous breakfast eats but delicious ones.

This specific egg dish was the apple and brie omelette that I’d devoured at the Trident last month. It was delicious, and a combination I never would have thought of on my own. I’m glad that someone else was doing their thinking (cooking!) outside of the box…because I never would have come up with this!

The Trident’s omelette is soo, soo good; I really can’t say that enough – and I know that part of the reason was because it was swimming in butter and loads of cheese. I have nooo problem with that, both of butter and cheese are near and dear to my heart (but not necessarily the healthiest for it); so… if I want to eat this a bit more frequently …. perhaps I should modify, eh?

In came my ingredients – for one serving: 2 large eggs, about 1/4 of a granny smith apple, 1 oz. of Trader Joe’s goat’s milk brie, salt, pepper and some red pepper.

I kept the apples pretty chunky so that they would still have texture, even when cooked.

This brie is easily one of my fave Trader Joe’s finds.

It’s soft, creamy and tangy perfection. …this ^ is probably one of my favorite photos that I’ve ever taken.

Now…this was originally intended to be an omelette…however, my pan didn’t want to cooperate…so it become a scramble. No harm, no foul. Still delicious.

I added some reserved, uncooked apple and sliced it thinly to sprinkle on top. Great texture contrast.

For a first run, this came out really well!

My only changes would be that next time, I’d cook the apples just a bit longer to get more moisture out of them, and I’d season the actual apples (just salt n pepper) to liven it up.

Been There

Baked Green Rice.

Been there. Done that.

I know, I know – I’ve done a post (or more…) before on this recipe that my mom has for Baked Green Rice. You know what though? I never did it justice…I don’t think I even ever posted the actual recipe for it.

Today changes that.

I came to my mom’s this weekend with one thing in mind: I wasn’t leaving until baked green rice was made and devoured.

Both these things were (easily and eagerly) accomplished.

This rice casserole is one of the easiest things ever – plus, not to mention that it’s full of room for add-ins and tweaks – like different veggies, meats or cheeses. Plus, the leftovers are spectacular…and that’s the important thing for a “party of one” like myself!

This recipe was handed to my mom from a friend who had seen it published, at some point in the Boston Globe. It says that it serves 6…but honestly, for me, it’s more like 12. They would be six HUGE servings.

Ingredients:

  • 4.25 Cups of Water
  • Salt, to taste
  • 2 Cups – long grain rice, rinsed (I’d love to do this with all sorts of grains)
  • 2 eggs
  • 2 cups milk (I use fat free)
  • 1 box of frozen, chopped spinach, thawed and drained thoroughly
  • 1 clove of garlic, finely chopped
  • 1 small onion, finely chopped (I love onion so I kept the pieces bigger)
  • 1 cup grated Parmesan Cheese
  • 1 cup part-skim mozzarella (this is my mother’s addition)
  • Black pepper, to taste (our addition)
  • Red pepper flakes, to taste (our addition)

1. Set oven to 325 degrees. Oil an 8×12 inch baking dish.

2. In saucepan, bring the water to a boil. Add salt, to taste. Cook rice for about 40 minutes or until tender.

3. In a large boil, beat together eggs and milk; add spinach, onion, garlic (for the record, we precooked the onion and garlic in this recipe) mozzarella, half of the Parmesan and the rice. Season to desired level.

4. Spread evenly into the baking dish, sprinkle the top with the remaining mozzarella and sprinkle black pepper and red pepper flakes over the top.

5. Bake the dish 45-60 minutes until custard is set and the top is brown.

Dig. In.

 

One thing you have to know about me is that I absolutely love food. Obsessed might be the better word for it. I love it so much that I blog about it on regular, often daily, basis. Whether it’s a Michelin-rated restaurant or a taco truck, I want to try it. I love talking about food, blogging about food and photographing food. It’s a passion of mine that has translated into new opportunities, skills and relationships.

Bundled Breakfast

Yesterday’s 10+ inches of predicted snow came down as rain and ice.

While much less dramatic, it was still a messy, cold and dreary day out there, and I woke up with one thing on my mind:

Hot.Breakfast.

For some reason, eggs have been on my mind – I think mostly because I haven’t had them in my refrigerator for months. As one of my Whole Foods picks yesterday, I finally had a small carton, and I knew exactly what I wanted to do with them.

Breakfast Quesadilla.

An awesome combination of an egg, mozzarella, a veggie sausage (with a lil’ maple syrup scrambled in there) and hot sauce, all bundled up in a toasted tortilla, seriously made my morning.

Plus, breakfast is always better when it can be enjoyed while still in your pajamas (with no plans of getting out of them), with bed head, and knowing that you don’t have to rush out the door to school or work on a weekday.

Now, today…today is a different story! Rushin’ out the door!

A Little Bit'a This

Hello, hello loves! I’m glad to be back for a real post. haha I just got back into Boston after relishing my last sane weekend for probably at least a month. It was glorious (until about 1pm today when I may have had a minor freak-out..), but all things aside I am excited for what’s ahead of me.

I’ve got a great internship starting tomorrow. I am really lucky to be gaining professional experience and getting paid as well. Paychecks are always a wonderful thing. For the next month my full-time internship and my full-time summer course load will overlap, and undoubtedly be stressful…but I will, at the very least, try to navigate those waters with grace. haha Wish me luck! :)

Speaking of water … crazy storm here in Boston. You should see all of the trees down (and all of the cars crushed). It’s nuts. I do not have any pictures of my own but…seriously crazy damage.

Now that my schedule is more permanent – my eating habits with hopefully improve a bit…I’m usually good during the week, but it’s the weekends that damn me! haha

The Incredible, Edible Egg

Good morning everyone!

I got a fantastic night’s sleep last night, and it was GLORIOUS to wake up without an alarm. :) It’s a perfect fall day, and I’m just going with the flow. I have no particular plans for the day, and I thoroughly enjoy that. haha

This morning, I made scrambled eggs for the first time in…forever. I rarely make them, I rarely eat them. However, I really wanted them this morning. Plus, I had the time to actually make them. I made my eggs with 2 eggs, salt, pepper, skim milk (just a touch), some crushed red pepper flakes, and Habanero Heaven Deadly Pepper Sauce. What can I say, I like ‘em spiiicy. :) Oh and I sprinkled some shaved Parmesan cheese over the eggs.

I also had a couple of small squares of some jalapeno cheddar cornbread my mom made. Perfect accompaniment aaand delicious! I’m sipping on some cranberry pomegranate juice, and preparing myself for an afternoon of leisure — not too shabby! haha :)
