Ice Cream Party

Hello, loves! I had planned to post last night – but my utter exhaustion caught up with me and after I stuffed my face I simply crashed. Exciting, I know. haha

Let’s start with Friday, k? K.

After class/lab the night before (and once again getting stuck in the middle of the Lakers’ police escort to the Garden – so happy the Celtics pulled off a win),  the 6 hours of sleep *maybe* that I got before heading to work was not enough.

Therefore, coffee was extremely necessary.

I dressed myself -for possibly the best day out of the next 4- and skipped breakfast in favor of fruit and a muffin during our morning meeting.

My day started off with seeing a dog get *technically* hit by a car at the corner of Dartmouth and Beacon. My heart literally leaped into my throat. Luckily, it was more of a “the dog ran into the drivers side door of the car” thing, and he was absolutely okay.

I felt so bad for his owner who was running after him screaming…the dog must have just made a break for it from the house. Luckily – the dog was absolutely fine. I felt  bad for the driver; I can’t imaging the horror of thinking you’d hurt/killed an animal.  He was so nice and stopped to make sure the dog was okay. Plus, the Boston police officers who were working up the street, and had seen the guy running after his dog, were nice enough to come down and check on everything, too.

The scare aside, the rest of my day was great. We had a long morning meeting, we got sweet mugs – you know I’m a sucker for a good mug- (see Greg, they are still utilizing your ideas!), and then in the afternoon we got a free ice cream sundae bar! haha Yes, I work at a bank.

I got cookie dough ice cream, with strawberry sauce, mini-Reeses Pieces, mini-Snow Caps, whipped cream and sprinkles. Whether you’re 20 or 60, a secretary or an executive – everyone is a kid when there’s free ice cream. You should have seen the line. haha

Oh, and yes – I did eat a real lunch, too. haha Herby turkey again.

After work, I went out for a few drinks with some of the people I work with. It was great to get to know everyone outside of work.

Once, I was home though exhaustion hit (I think I probably looked like a zombie) – and so did the carb cravings. Seriously, I think my body was like “You’ve run yourself ragged, you need carbs!” I happily obliged. Everything Pretzel Thins from TJ’s and a bbq chicken pizza!


I was tired. I slept for 12 hours. haha When I woke up a set to work cleaning the apartment which was a mess due to the fact that I’d had to empty the under the counter/sink cabinets for routine extermination checks (no rodents up in here! haha).

Also, a soft serve ice cream truck sat outside my building for an hour. I’d never seen a soft serve truck before…like real, legit ice cream… I resisted but it was cute seeing ALL of the little kids and their parents swarm it! haha If he comes back next Saturday I will definitely get some though.

I’ve just been grazing and enjoying the relaxed pace of today. I think I’m going out to dinner tonight – but we’ll see.

Spicin' it up

Evening bloggies!! It is so unbelievably gorgeous out right now – it’s a perfect 80 degrees out at a little after 7p.m. LOVE summer. :) Tomorrow will be a scorchaaah (as they say haha) – 90 degrees. I got all my “heavy lifting” errands done today for that reason. Nothing is worse than dragging heavy bags around the city while sweating profusely. Not cute. haha

FIRST and foremost – I got a fun delivery over the weekend! Ryan and the folks over at POM Wonderful were kind enough to send me a case of their 100% pomegranate juice! Delicious and so good for you (we all know the amazing antioxidant power of the pom)!! The thing I love about POM Wonderful is that it really is 100%, non-imported  pomegranate juice with no additives! No trickery. Plus, they grow their own fruit, pick it and squeeze it – along with making the bottles. Seriously, it is so generous of them, and I am so excited to use the juices in as many creative ways as possible!!

I was sipping my coffee when my first idea struck: POM/Vanilla oats topped with blackberry jam. Bam.

I made the oats the way I normally would – per the directions on the container – but I subbed in POM juice for some of the liquid. I also added approximately a teaspoon of vanilla extract and a little less than a packet of Truvia. These were really good – they had a little bit of a tang from the juice and the sweeter jam on top balanced it out. I will definitely be making these again.

I spent the morning being productive, and eventually got out and completed all of my errands.

Upon return though – LUNCH was the only thing on my mind. It was pretty warm out at that point so all I was craving was something cool. I ended up with some honey Greek yogurt (a la TJ’s) and some strawberries and mango.

I had dinner planned out in my head…even last night I was thinking about it – and it didn’t matter what temperature it was outside…I had my heart set on some souptaco soup to be precise. My mom had made a version of this with chicken this past weekend, but I wanted to try and come up with a veggie version.

It was a success – I do have to say…no measuring occurred in the making of this soup (the joys of cooking vs. baking!) but it was pretty darn easy.

This soup contains:

  • Carton of low sodium veggie broth
  • Water (about half of the amount of broth)
  • Taco Seasoning (as much as you want…I went a little heavy handed and it’s spicccayy)
  • Salsa (1/2 cup?? I dunno) – I chose Verde
  • Corn
  • Spinach
  • Edamame
  • Black beans (rinsed) – 1 can
  • Garbanzo beans (rinsed) – 1 can

I can’t remember if there was anything else…haha. I think that was it. Super easy – super yummy. This makes a ton! and I am excited to try and use it in different ways throughout the week. Like I said though – I used almost the whole package of taco seasoning and it’s really good but spiiiiiiicy (good thing I love spicy) – I was sort of flying blind because I hadn’t actually used TJ’s taco seasoning before – but it worked out quite well. :)

Feelin' Saucy

Happy Wednesday, lovelies. How is the week treating you?? Well, I hope!

Today — it snowed. I was totally not aware it was supposed to snow, and failed to open my blinds before I left my apartment so needless to say I was super surpried to find white stuff on the ground when I stepped out the door. The funny thing is that I think it was the warmest day in a while. haha :)

It was reaaaallly tough to get out of bed this morning. I don’t know what it is with this week, but the snooze button was my friend…or worst enemy. I scrambled to get ready and ran out the door – and did not have the time to eat or even gulp down coffee before my first class. How I survived? I do not know.

I grabbed a coffee in the 10 minute window in between my French class and it’s lab. I ran and grabbed some fruit and a coffee. It was glorious.

After my classes were finished I had to stick around to work on a French presentation for Friday. So I grabbed a buffalo chicken wrap from a store nearby…it was good. I ate half in the library and then the other half when I got back to my apartment.

I munched on a cheese stick (cheddar, yumm) before settling in to make dinner.

Dinner tonight was meatless meatballs and veggie tomato sauce. Yum. I love the sauce that comes in the can…it cost like… a dollar and it’s delicious!! I could eat this sauce by the spoonful — it’s just so fresh tasting.

Tonight I’m debating on whether or not I should just skip my work tonight, and go to bed early or stay up and get some work done. I think I might go with option #1…I’m tired already…which knowing me, means I won’t be extremely productive. Getting a good night’s sleep, and waking up early is probably the better option…we shall see! haha

Food + Fragrance

Evening lovelies!

Today was a busy day — I woke up briiight and early for no reason. My eyes just didn’t want to stay shut anymore. It was nice to just lounge around a quiet house for a few hours before my brother woke up. I made coffee for both of us…though, my cup ended up being more like “Would you like some coffee with your milk?” rather than “Room for milk or cream?”

Case and point:

It was still yummy, and did it’s job — considering I was already mostly awake by the time I drank it anyway.

My brother decided it was time he read my blog and decided to contribute his coffee (in the frog mug, of course!) to the blog.

Peek-a-boo!

For breakfast, I can’t say that I was super hungry so I just had a banana with about a tablespoon (a generous one) of peanut butter schmeaaaared on it. My brother laughed at me as I had to pick up globs of PB that kept falling off my banana. I’m glad I could be so entertaining. haha

My bro and I had plans to head out and get to the mall and to Barnes and Noble this afternoon — so after bopping around in my room to the likes of Gaga, I grabbed an apple and a cheese stick for lunch and we were out the door! After a couple of checking deposits and a Wallyword — aka Walmart — stop, we headed to the mall.

After successfully testing probably every men’s cologne in both Sephora and Macy’s we found a good one — and then I decided I needed to spray myself with women’s perfume because I basically smelled like a man..nonot only like a man…but like about 20 different men. haha

Needless to say, we were a…. fragrant… pair. bahaha.

I had wanted to get a Raspberry Lime Rickey from Brigham’s Ice Cream (so unbelievably good!)…but the “store” was gone! Boooo. My brother laughed at me and told me that I was probably the only person who ever bought anything there…and as delicious as Brigham’s Ice Cream is…their store in the food court was never really busy….sooo it’s probably true. However, closing a store or not — Brigham’s friggin rocks!

My disappointment disappeared quickly though as we headed to Barnes and Noble!! (Dork? Yesss). I got myself a latte, and looked through cookbooks — but they didn’t have the book I was looking for. Online shopping here I come.

For dinner, I made myself a brown rice mess and switched it up. Can you spot the differences? hehe

I also changed up the salsa. This stuff is really good.

I’ll probably snack on some more fruit and some popcorn tonight. A nice little nightcap. haha :)

The People’s Choice Awards are on tonight? Anyone watching?!? Celebs (and the gossip that follows them) are my guilty pleasure. haha :)

Made it!

Hey, hey, hey!

Ahh, so I got everything I needed to get done for today finished …and a little ahead of time. NOW it’s time for the dauting task of gearing up for tomorrow – currently I am working on my French homework (mes devoirs!) and fueling up for some MAJOR advertising studying.

The yogurt mess I had earlier today really has held me over until now…it was so filling. I grabbed my Trader Joe’s Very Green Juice Blend and headed to class beverage in hand.

Yummy, yummy, yummy.

Class was alright. Ethics is not my cup of tea. I’m just not a person who intensely questions things…at least out loud. I enjoy what we are learning, but I’d enjoy it more if it didn’t involve grading. haha

As soon as I got back from class, I cranked up the oven and prepared to roast the remainder (about 3/4) of the cabbage I had in the fridge. I’ve been craving fresh veggies and this was the only one in my fridge. *I need to go grocery shopping, but…yeah, time is precious.*

It came out to be SOOO much cabbage — I’m not complaining though, it’s delicious (still eating) and definitely a needed boost in my energy. I topped the roasted cabbage with about a cup of brown rice which I prepared with my usual soy sauce, chili paste and sesame oil. I do have to say I love what roasting does to cabbage, the little crispy bits are the best!!

The cabbage literally filled the whole plate…it’s hard to see in the pictures as the rice is kind of in the center there…but yeah…so much. haha

Mixed it all together, and I’m still workin’ on it. haha :)

At some point tonight I’ll probably have something sweet whether it be fruit or pudding or something …it won’t be for a while though! haha
