And they're off!

Evening lovelies! I was lucky enough to have today off (thank you Patriots Day/Marathon Monday!). Unfortunately, I was not in the city for the marathon. The amount of traffic going into the city today is tremendous and it would have been, unfortunately, a huge hassle – so I decided to stay at home one more day. No complaints here – although of course it would have been fabulous to cheer on all of those runners.

I cannot imagine running 26.2 miles.. I, personally, know 3 people who ran and completed the race. Pretty amazing stuff.

Let’s back-track a little bit. Last night – I hung out with my mom and we made cookies. Dark chocolate chunk cookies – if we’re going to be precise. They are ridiculously good and are definitely the type of cookie that warrants an ice cold glass of milk on the side. They are a definite indulgence, but so worth it!

Today, I did the usual. Woke up – had a coffee and put together Mighty Maple and jam on some toasted Arnold’s sandwich thins. Yum.

Some browsing of baking was also involved...

I spent most of the afternoon out and about – doing some errands and taking advantage of the tax free-ness of New Hampshire. First stop was Starbucks – I got myself a little latte and a big ole bottle of sugar-free hazelnut syrup for my coffee. It was so much cheaper than I thought it would be, and I know, I know…sucralose…moderation will be key with this.


I picked up some new mugs from the Christmas Tree Shop! No picture right now…but you will see them soon enough! haha

My next, obvious, stop was Target!! Ohh Tarjaaay, how I’ve missed you!! I picked up some weights (explanation in a second), some new eyeliner, shampoo and True North’s Almond Pecan Clusters.

Going back to the weights…yep..I’m starting a more “formal” workout routine (not 100% on what it will be yet…I’ll let you know when I get it totally figured out)…I guess you could call it. I hope the fact that right after the semester ends I will have a couple weeks to make a habit of it and just have it be a natural part of my day.

The way I look at it is, this summer I will be at my job most of the time…and most of that time will be at a desk, which is a lot less active than I am now…put other things into the equation like business lunches, snacks people bring to work, etc…and it’s probably a good idea to make sure that activity is built into my day.

Voila. Nothing revolutionary, but a new routine for me.

Dinner tonight – my mom and I whipped up a foccacia recipe that turned out to be a little bit more like beer bread than like foccacia. That’s okay though – beer bread is delicious (and less oily)…especially studded with herbs and sun-dried tomatoes! :)

The bread went with a dinner of left over chicken saltimbocca with prosciutto, mushrooms and marsala wine and a cranberry and walnut salad. The chicken isn’t the most appetizing looking (though SO, SO good).  Therefore, the salad will speak for the meal. haha

Dedication

Hey, hey everyone! Sunday, already? Ahh – the weekends always fly by, don’t they?

Tonight’s post, I’m dedicating to THESE:

I am seriously obsessed with Trader Joe’s Whole Wheat Flour – Reduced Carb – Tortillas! Why you ask? Whole Wheat? Sure. Reduced Carb? Okay. Only 45 calories a (small) tortilla? That’s pretty nice. Seven grams of fiber per tortilla? Also pretty sweet. …..However, the REAL reasons I love these are none of those (and those reasons are pretty awesome, wouldn’t you say?)… it is because they taste absolutely amazing and are sooo versatile!! When I first opened the package, I was sooo surprised. These little babies are more like crepes than they are tortillas!! (Which, I’m pretty sure if you slapped one of these puppies in a pan, browned it up a little and slathered some Nutella inside you’d be in h.e.a.v.e.n.) – I used them in both my dinner and my lunch today – nom.nom.nom. haha

Anyway – onward…

Breakfast was pretty standard…the exceptional thing was that I actually ate cereal at the “proper” time of day … amazing. I had a real breakfast today. haha Coffee and cereal goodness.

Today was supposed to be glorious, too. I knew I wanted to spend a lot of time outside, and I needed to get some grocery shopping in…so off I went – pretty early. Now, for me, grocery shopping (especially big trips) needs to be done in shifts…I don’t have a man or a roommate to go do my shoppin’ with me (that isn’t meant to sound depressing – it isn’t – it’s just a fact haha)…and when you have to carry gallons of milk, etc. for a few blocks…it’s better to do a couple of trips. haha

First trip: Trader Joe’s

Stocked up on lots of cheap goodness…and yes, Panda Puffs…because clearly, I am a child.

Next trip: Shaw’s

Needless to say, my fridge is very, very full. :)

I immediately cracked open the box of the Wheat Thins Artisan White Vermont Cheddar crackers. Yum! Highly recommend…brought me back to my love for Cheez-its as a kid (…and adult)…but way better for you.

I spent the afternoon rearranging my apartment – I had all of my windows open – and it was just like…moving in all over again. haha. I like my set up now – I live in a studio apartment…teeeeny-tiny…but now it’s arranged so that there are more “dedicated” sleeping and lounging areas…plus a lot more space it seems. haha Pretty proud of myself.

For lunch, I had a few peanut butter and jelly roll ups (Mighty Maple + Blackberry jam, to be exact). Delicious! :-D

Dinner continued my use of the lovely lil’ tortillas: Dietz & Watson Buffalo Style Chicken with an herb and greens mix and Laughing Cow cheese!! I had two of these babies. Mmm, I love the mixture of herbs in with the greens.

Tonight will be spent relaxing and enjoying my new set up…maybe if I get ambitious, I’ll get a head start on some stuff for the upcoming weeks. :)

Mac n' Cheesy

Who is watching the Olympics? I watched the Opening Ceremony last night and then some of the events today.

I slept waaay in this morning. What a difference a neighborhood with no outdoor noise makes! haha

I had some peanut butter toast for breakfast…obviously Mighty Maple. haha :) Yumm. Yummm. Yummmm.

I spent a lazy day with my mother — I’m not going to lie, I did not get out of my pj’s…haha.

I had some soup for lunch.  It was one of those Campbell’s Select Harvest soups...and I forget the exact name, but I was not too impressed. I didn’t finish it, but it made me feel nice and toasty — which is the whole point of soup, right? :)

My brother came home this weekend, too! Yay! So it’s just the 3 of us chillin’ and enjoying some time together.

My mom made us some mac and cheese — yummmm! And we accompanied it was a delicious salad with walnuts and dried cranberries. My stomach is verrrry happy right now!

I am just going to spend tonight in — relax, enjoy a fire and …relax some more. haha

It’s a little early, but Happy Valentine’s Day, bloggies!! I’ve decided you all are my Valentine’s this year! haha :) Love.Love.Love!!

Short N' (Very) Sweet

Hiii! Hooray for Friday night! haha Today was … rough. Oy. I felt like crap for the majority of the day…so I didn’t eat a whole lot. My stomach just felt … horrible. I did have 2 coffees…haha. What you thought I’d give up my caffeine for a tummy ache?? :)

I got a salad for lunch – knowing that I needed something in my system. Spinach with a bean salad of sorts and then green beans and tomatoes.

I also noshed on some Animal Crackers during my last class of the day.

I am home this weekend — celebrating Singles Awareness Day (more popularly known as Valentine’s Day) with mi madre…as alas — no Valentine. C’est la vie.

But LOOK! Look at what my mom got me as a present!!!!

Sooo sweet of her!! Eeee!! So excited…figures BOSTON doesn’t have freaking Mighty Mapes but my small town in NH does. Has anyone had Bee’s Knees? I haven’t tried it yet. I assume it’s delish. :)

I have yet to eat dinner, but it’ll happen eventually. My mom has too much delish stuff in this house.
