Outside the Box

Hello, hello my loves!

Today, I woke up craving eggs – and by today…I mean that I’ve been craving a specific egg dish for a while now, and I finally got around to purchasing the ingredients to prepare it! …so less than spontaneous breakfast eats but delicious ones.

This specific egg dish was the apple and brie omelette that I’d devoured at the Trident last month. It was delicious, and a combination I never would have thought of on my own. I’m glad that someone else was doing their thinking (cooking!) outside of the box…because I never would have come up with this!

The Trident’s omelette is soo, soo good; I really can’t say that enough – and I know that part of the reason was because it was swimming in butter and loads of cheese. I have nooo problem with that, both of butter and cheese are near and dear to my heart (but not necessarily the healthiest for it); so… if I want to eat this a bit more frequently …. perhaps I should modify, eh?

In came my ingredients – for one serving: 2 large eggs, about 1/4 of a granny smith apple, 1 oz. of Trader Joe’s goat’s milk brie, salt, pepper and some red pepper.

I kept the apples pretty chunky so that they would still have texture, even when cooked.

This brie is easily one of my fave Trader Joe’s finds.

It’s soft, creamy and tangy perfection. …this ^ is probably one of my favorite photos that I’ve ever taken.

Now…this was originally intended to be an omelette…however, my pan didn’t want to cooperate…so it become a scramble. No harm, no foul. Still delicious.

I added some reserved, uncooked apple and sliced it thinly to sprinkle on top. Great texture contrast.

Gooey goodness!

For a first run, this came out really well!

My only changes would be that next time, I’d cook the apples just a bit longer to get more moisture out of them, and I’d season the actual apples (just salt n pepper) to liven it up.

Work It

Hello hello! I hope everyone is doing wonderfully. It’s been a quiet day for me…lots of work to get done. I’m trying to get things done ahead of time because … Wednesday will.be.hell. I have a project and 3 finals all in one day. All of my professors decided they wanted summer to start early (no complaints there), but it means that Wednesday is a verrrry busy day.

This is how I decided to be productive today:

I worked out – hence my random sneakers – and then got down to business with my computer, course materials and at the time this photo was taken – strawberries.

I was up bright and early again. When I think back to days when I could sleep until 11…12….1 p.m. (umm ridiculous)…I’m kind of appalled – it’s incredible to me. Honestly, the latest I sleep now is maybe 10…and that’s at my mom’s house where it’s super quiet. Plus, that’s a rarity.

Started the day with coffee … twice … first time around I packed the espresso too tightly and it didn’t brew correctly. haha Second time was the charm.

I decided to be creative with breakfast…and since the breakfast items in my apartment are scarce…I decided on a breakfast quesadilla/pb & “j”. Justin’s Maple Almond Butter hooked up with some sliced strawberries and a tortilla and got toasty in a pan. Deeelicious.

Lunch was a turkey wrap … tortillas got quite the workout today, I guess. The usual suspects are all in there.

For dinner, I was thinking about doing a pizza…but then I didn’t feel like cranking up the oven….so I made my usual tortilla pizza into an omelette. Oh yes…spinach, a little red onion (not as much as I usually put on my pizza), cheese and barbecue sauce for dippage. haha It was really good. I will definitely make this again.

Alright – gotta get back to work. Ready to gear up for the week?? It’s supposed to be rainy here..it makes it a little tough. haha

Anywaaay, growing up a little bit here….

I hope you are all doing wonderfully! It was gorgeous here, in Boston, today!! The sun was in and out of the clouds, but it was warm. Yay!! It’s currently about 70, and I’m soaking it in (windows open as wide as they can be opened) because tomorrow is supposed to rainy and miserable. That will be good for all the work I need to get done though. haha

I started the day off with a coffee – bought – because I was a geeenius and forgot to stock up on a new gallon of milk, and I wasn’t going to test the 4 days past its “use by” date milk at 7am…not the best way to wake up in the morning. haha

I apologize for the dark pic…obviously, it was cloudy/early at that point. haha I was also apparently too lazy to turn on the lights. Oops.

At Starbucks – the barista randomly asked me where I was from after I ordered and he made my drink. When I replied Boston/New Hampshire he got this funny look on his face, and was like “Wow, you sorta sounded like you had a Southern accent, that’s why I asked!” …I simply replied, “Oh really??” and then his said, “And that’s not a bad thing!!” – It was a random exchange, for sure. Especially considering the only time I ever have a hint of Southern accent in my voice is after I’ve spent time with my cousins who grew up in Texas – and now live there and in North Carolina. I think he needs his hearing checked, haha, but I’ll take it as a compliment that I don’t sound like a harsh Notherner. ;-)

Got home after classes…starrrrving. I made myself a hummus, mixed greens/herbs, and honey roasted turkey “wrap”. It didn’t really wrap well. It was goood though.

Then…mail time! haha I got some free samples of True Lemon, True Lime and True Orange in the mail today. I have yet to try them, but they look really interesting!

That’s not all folks…I got something else delivered today….

Big ole box! ...which matches my couch....

The Calphalon pans that I won in Ashley’s giveaway arrived!! (Record-time, might I add!!) I was so excited…I immediately ripped them out of the packaging and got them prepped for a little cooking action.

10 and 12 inches respectively.

They are omelette pans so I thought – what better way to break ‘em in than with some omelette making!? Dinner was an omelette made with egg whites, spinach, hot sauce and a chopped up Sargento Cheddar cheese stick! haha

Perfection.

These pans are amazing! No stickage (oh yes, I make up words) and it was a little crispy on the outside and tender on the inside. YUM.
