It’s a Date

Stuffed. Dates.

Glorious finger food.

A glorious, bite-size jewel of chocolate, peanut butter and date. Super simple -albeit slightly messy depending on the viscosity (or generosity) of your dollop of PB!

While, I have been making these – assembling should be the term, I guess – for a while now – I have yet to post on them! Again, I’m not sure of the origins of this little recipe, but I first saw it on Gabriela’s blog, and knew I had run to Trader Joe’s and pick up a big ol’ carton of Medjools and start assembling.

My assembly line goes like this: pit the date, stuff date with a few dark chocolate chips, cover the chocolate with PB (my new favorite is the chunky, salted Trader Joe’s kind!), and then of course…sprinkle with a few more bits of dark chocolate for good measure.

The result is absolute heaven – a sticky sweet treat that sticks to the roof of your mouth. It’s a small bite, but unbelievably satisfying.

I’m all ready to start experimenting with ‘stuffings’ – perhaps a nod to that raw chocolate, coconut cake is in order…simple and on a smaller scale?! :)

While it’s not an on-the-go treat, this is one I see having a long life in my kitchen.

Back in the Saddle

Good morning!! I cannot believe its Sunday already AND that I did not really post yet this weekend…*sigh* haha

I hope you all have had a splendid weekend!! My weekend was pretty good, low-key, but good — even with a dentist appointment in there. haha

I’ll kinda do a wrap up of what’s been going on for the past couple of days (which feel like eternity in blog-time, right?)  Friday was a VERY busy day — I trekked all the way to school with ALL of my books (two whole bags worth, joy)…and I put them all in…my LOCKER. YES! A locker…in college. Who woulda thought. haha It feels SO high school, but it’s a life saver. I’m glad my school does it (considering how many kid’s commute its a good idea). I didn’t even have a locker in high school (eons ago)…I think the last time I actually remember using a locker was in 5th and 6th grade…and it might have been plastered with photos of Leo DiCaprio (Titanic, obvssss) and Hansen. hahahahaha

All joking aside, this locker really will save my ass this semester — or should I say…it’ll save my back.

It was a hectic day which included hopping the train home for my appointment yesterday. While I waited for the train a random middle-aged woman decided to talk to me about how she likes how I do my eyeliner and asked me to instruct her on how to do it…. yah…yayy cities! haha :) I honestly don’t think she was a weirdo…though it was a weird topic of conversation to have with someone you’ve never met or spoken to previously…I think she was just very interested in how I do my eyeliner. ha She continued to talked about galoshes and how she wears them in the garden but doesn’t get how people where them to walk around the city…her thoughts…they’re feet must be cold! My thoughts: I guess you’d rather have cold dry feet than cold wet feet.

Moooving on. Yesterday, I was up bright and early for my dentist appointment (*dread) — it went well actually, my hygienist was so nice (some of the ladies there can be quite mean about flossing deficiencies….haha). I walked away unscathed and happy camper with a new toothbrush, floss, toothpaste and a 2010 planner. haha What? Everyone’s dentist doesn’t hand out planners?? :-p

Breakfast was….A YOGURT MESS! SHOCK! I know it’s been a while. :) Chobani, honey, flax, and sunflower seeds. Nom, Nom, Nom.

In the afternoon, I enjoyed a couple of bowls of popcorn and an apple with PB! Woopwoop! :)

Dinner was baked green (and this time lost of other colors, too) rice. I told my mom that we should use up whatever veggies were gonna go back…so we ended up with the obvious spinach, carrots, onion, eggplant, and tomatoes … I don’t think there was anything else? Maybe? haha Either way…it was freaaaaaking delicious!!! I need to make this at my apartment ASAP.

After dinner, I totally intended on blogging…but I got sucked into the SAG Awards preshow annnnd the SAG Award’s themselves. As a former musical theatre geek…lemme just say…GLEE!!!!!! YAY! haha I’m so happy. Plus, the dress that Lea Michele wore was gorrrg (she was too, obviously)…I especially loved the color.

Anyway — hope you lovelies have had a wonderful weekend…that was mine in nutshell!! :)

Beer Bread

Ohh, Sunday – Sunday….how quickly you pass by… right?? How are all my lovely blogettes doing this evening?!? (I assume there aren’t any guys out there reading this…if there are…hello as well!!)

Last night – I couldn’t sleep again! ahh. I don’t know what they heck is up with my sleep schedule, but I need to get it back to normal because in a week I’ll have to jump back into my school schedule! I managed to drift off to dreamland thanks to the lovely power of maple and milk. Yumm. I honestly might drink this every night before I go to bed, just for the heck of it, it’s just so yummy.

This morning, I awoke pretty early…but then crawled back into bed so it was a bit of a late morning…but morning nonetheless. I woke up and make my usual pot of coffee, and grabbed a lovely little diddy out of the fridge.

Africa?

In mid-December, Jenna (of Eat, Live, Run) made a post where she mentioned leaving a grapefruit in the fridge over night with honey drizzled on top (obviously already sliced). Well, my mom just happened to pick up a couple of grapefruits at the store so last night I prepped ‘em, and let ‘em take a nice – chilly – nap.

This morning…unwrapped the fruity goodness…and OH MY. Delicious. Why has this not been in my life?! I remember having grapefruit as a child, and vividly remember the tart/bitterness that I usually associate with grapefruit. The honey (and not a whole lot of it, at that) worked miracles, and this was wonderful. After devouring the fruit I squeezed it to make sure I got every bit of juice. Yay for revisiting/rediscovering foods!

A little bit later, I was still hungry so I devoured a banana with a couple of tablespoons of peanut butter.

This afternoon, I sat around with my mom and my dog and watched the (embarrassing) Patriot’s game (they played horrendously & got freaking STOMPED by the Ravens). We noshed on popcorn, and I made us both tea (Tazo’s “Awake” for her, and Tazo’s “China Green Tips” for me).

I also noshed on a cheese stick and on a …few… slices of my mom’s homemade beer bread. Naughty. – made with Sam Adam’s Winter Lager.

For dinner we had this awesome “stew” that my mom cooks up. It’s chicken in a mustard and tarragon sauce with white kidney beans. It’s also stewed with onions and I put it on a bed of baby spinach.

Oh! and my mom got me this little sucker today – it’s for all of my quarters for laundry – so that they’re not just floating around my apartment. haha It’s cute. :) A Pigzebra. haaha.

Bah, tomorrow is Monday –  weekends always fly by (even extended ones, like mine). I hope everyone is doing great!!

Green Rice

Hola my beauties!

How is everyone doin?! TGIF! Although, my whole week has sorta been like an extended weekend…but I’ll celebrate the fact that it’s Friday for you guys!! … I know…I’m really takin’ a bullet there. haha :-)

Today has been a snowtastic (not a real word…but it should exist) day! I slept WAAAAY in…mostly because I didn’t fall asleep until after 3am. I just could not sleep for the life of me. I didn’t even know what time it was when I finally decided it was time for the best restlessness cure ever. I learned this little diddy from a high school friend of mine, and it’s awesome – works like a charm. I mixed together warm (ff) milk and a little bit (not sure how much) of maple syrup…just enough to make it slightly sweet. Yummm. It’s delicious and I was OUT soon after…ohh the magic of warm milk. :-) I mean I know that warm milk isn’t this magical cure all for restlessness – but even if its all in my head – I was sleepin’ like a babe in no time. Though, you’ll have to excuse me for not taking pics at 3am ;-)

Do you do anything special when you can’t sleep?

When I woke up, I wasn’t really hungry. Perhaps it was my milk concoction at 3am? Hmm.. either way, I made myself a large cup of coffee, and sipped away on that for most of the morning.

My coffee decided to make shapes this morning. What is it? Is it the pi symbol?? Musical notes?? Oooh…Stonehenge??? hahaha Mysterious.

For lunch, I finished up a small slice of quiche (avec du jambon et du fromage [ham and cheese]). Twas delish! I also had a cheese stick (or two)… hehe

I got a little bit of yoga in via Comcast’s OnDemand. Woot! Bendiness here I come! :-p

I then decided I was hungry again, and soothed my peanut butter cravings with a couple of spoonfuls of the good stuff. …I also had another cheese stick.

Dinner was my mom’s aweeesome baked green rice. It’s a delicious baked combo of cheese (parm & part skim mozz), spinach, brown rice, eggs, milk, garlic, and onion.

Baked Green Rice

Ingredients:

  • Olive Oil
  • 4.25 Cups of Water
  • Salt to taste
  • 2 Cups of brown rice
  • 2 Eggs
  • 2 Cups of milk (we use fat free)
  • 1 box of thawed and drained frozen spinach
  • 1 clove of garlic, minced
  • 1 small onion, minced
  • 1 Cup of grated Parmesan cheese
  • 4-6oz of Mozzarella cheese (we use part-skim)
  • Black pepper to taste

Directions:

Cook up the brown rice (using the water, salt and brown rice) until done; separately: mix together eggs, milk, pepper, garlic, onions, all of the mozzarella, all but a few tablespoons of the parmesan and spinach; fluff cooked brown rice; mix milk mixture and brown rice together (if your rice is hot, be careful to temper the mixture so that the eggs don’t scramble!) and put into casserole dish; top with extra parm and bake at 325 degrees for 45-60 minutes or until the custard is set and the top is brown.

It makes A LOT, and you could throw in so many different types of veggies or meats – or try different cheeses…like pepper jack! Yum. Plus, leftovers are delicious.

Habanero Heaven

Evening bloggies!

I hope you all are doin’ well!! Today I was totally cool and didn’t leave my couch. Oh yes…I know — such a busy bee. There wasn’t much for me to do today — so I just lounged, hung out with my adorable dog and my fat *yet, adorable when she decides to be* cat.

I woke up early because FedEx was picking up a package that my brother was sending out, and I was in charge of it…unforuntaely…they didn’t show up until …oh…5:30pm. haha Oh well, I guess it’s better than having missed them.

This morning, I made myself a nice cup of coffee and sliced up an apple and enjoyed it with a couple of tablespoons of peanut butter.

For lunch, I had my usual stovetop popcorn…it’s so comforting. I don’t know why — maybe it’s the smell of it…maybe it’s the satisfaction of a crunchy, salty snack. Or both. No matter the reason, it’s delicious! I spiced it up with a little garlic powder, onion powder, and some parsley flakes. :)

I also made myself a little “spritzer” so to speak…with my Bolthouse Farms Green Goodness beverage and some sparkling water. It was quite deeeelish. And bubbly! Bubbly is always fun.

I rocked out to Gaga for a while *do we see a trend??* …I can’t do that in my apartment so at home I BLAST my music. And for dinner I had the largest sweet potato I’ve ever seen. Plus, some broccoli!! Yummy greens! Topped with some Mother’s Mountain Habanero Heaven Deadly Pepper Sauce. — perfecto.

I’m gonna utilize some on demand yoga videos and then probably hit the hay! Perhaps a spoonful or two of PB will be in my future. ;-)
